This book examines the meat provision system of Rio de Janeiro from the 1850s to the 1930s. Until the 1920s, Rio was Brazil’s economic hub, main industrial city, and prime consumer market. Meat consumption was an indicator of living standards and a matter of public concern. The work unveils that in the second half of the nineteenth century, the city was well supplied with red meat. Initially, dwellers relied mostly on salted meat; then, in the latter decades of the 1800s, two sets of changes upgraded fresh meat deliveries. First, ranching expansion and transportation innovation in southeast and central-west Brazil guaranteed a continuous flow of cattle to Rio. Second, the municipal centralization of meat processing and distribution made its provision regular and predictable. By the early twentieth century, fresh meat replaced salted meat in the urban marketplace. This study examines these developments in light of national and global developments in the livestock and meat industries.

The Practice of Politics in Postcolonial Brazil traces the history of high and low politics in nineteenth-century Brazil from the vantage point of the provincial capital of Porto Alegre. In the immediate postcolonial period, new ideas about citizenship and freedom were developing, and elites struggled for control of the state as the lower classes sought inclusion in political life. In a shift from the Liberal Party to Positivist or Conservative rule during the bloody Federalist Revolt of 1893–1895, new leaders sought to bring about a more balanced structure of government where the capitalist was sympathetic to the worker, and the worker more passive toward the elite. This represented a complete change of opinions—a new regime of ideas. Termed a “scientific” approach by its proponents, the movement was based on historical process and would be brought about through civic education. Against the backdrop of the abolition of slavery and subsequent assimilation, the rise of European immigration, and industrialization, Kittleson investigates how “the people” shaped changing political ideologies and practices, and how through local struggles and changes in elite ideology, the lower classes in Porto Alegre won limited political inclusion that was denied elsewhere.

Brazil has the second-largest cattle herd in the world and is a major exporter of beef. While ranching in the Amazon—and its destructive environmental consequences—receives attention from both the media and scholars, the states of Mato Grosso and Mato Grosso do Sul actually host the most cattle. A significant beef producer in Brazil beginning in the late nineteenth century, the region served as a laboratory for raising cattle in the tropics, where temperate zone ranching practices do not work. Mato Grosso ranchers and cowboys transformed ranching’s relationship with the environment, including the introduction of an exotic cattle breed—the Zebu—that now dominates Latin American tropical ranching. Cattle in the Backlands presents a comprehensive history of ranching in Mato Grosso. Using extensive primary sources, Robert W. Wilcox explores three key aspects: the economic transformation of a remote frontier region through modern technical inputs; the resulting social changes, especially in labor structures and land tenure; and environmental factors, including the long-term impact of ranching on ecosystems, which, he contends, was not as detrimental as might be assumed. Wilcox demonstrates that ranching practices in Mato Grosso set the parameters for tropical beef production in Brazil and throughout Latin America. As the region was incorporated into national and international economic structures, its ranching industry experienced the entry of foreign investment, the introduction of capitalized processing facilities, and nascent discussions of ecological impacts—developments that later affected many sectors of the Brazilian economy.
