Book Description
Annotation The MYTOX association research platform, MYTOX "Mycotoxins and Toxigenic Moulds" was established in 2007 and consists of more than 50 researchers from 12 research laboratories in the Ghent University Association. MYTOX deals with mycotoxin research in a multi-disciplinary way, based on four main themes: (1) mycotoxins; (2) toxigenic fungi; (3) mycotoxins and animal health; and (4) mycotoxins and human health. In this way, MYTOX tackles the mycotoxin issue along the production chain from the field to the end consumer, within the 'One Health' concept. We welcomed over 100 scientists, researchers and representatives from industry, government as well as academia at the 5th edition of the MYTOX International Symposium, held in Ghent on May 11, 2016. The program included oral and poster presentations related to fungal-related disease monitoring and mycotoxin production; mycotoxin analysis in food and feed, as well as in animal and human biological samples; prevention on the field; management strategies during food and feed storage and processing.

Whole grains play an important role in healthy diets, due to their potential role in minimizing the risk factors for several diseases. Thus the need for a comprehensive work that addresses all aspects of whole grain technology including processing, product development and nutrition values. This book covers the technological, nutritional and product development aspects of all whole grains including wheat, rice, barley, rye, sorghum, millet, maize, and oats among others. The book will review and summarize current knowledge in whole grains with the intent of being helpful to the food industry in the development of high-quality whole grain products. Key Features: Covers the technology for whole grain processing Promotes the utilization of whole grain products Provides the information about the nutritional components of whole grains Explores the health benefits of whole grains Presents the latest trends and safety concerns of whole grains The chapters include amaranth, barley, brown rice, buckwheat, maize, millets, oats, quinoa, rye, sorghum, and wheat. In addition, current trends in processing technology and product development for whole grains are explained in detail in a separate chapter. The last chapter deals with the food safety management of whole grains. Contributions from global experts in this field make this book a key reference material for all aspects of whole grains. This book is suitable for students, scientists, and professionals in food science, food engineering, food technology, food processing, product development, food marketing, nutrition and other health sciences.

Book Description
Almost all homes, apartments, and commercial buildings will experience leaks, flooding, or other forms of excessive indoor dampness at some point. Not only is excessive dampness a health problem by itself, it also contributes to several other potentially problematic types of situations. Molds and other microbial agents favor damp indoor environments, and excess moisture may initiate the release of chemical emissions from damaged building materials and furnishings. This new book from the Institute of Medicine examines the health impact of exposures resulting from damp indoor environments and offers recommendations for public health interventions. Damp Indoor Spaces and Health covers a broad range of topics. The book not only examines the relationship between damp or moldy indoor environments and adverse health outcomes but also discusses how and where buildings get wet, how dampness influences microbial growth and chemical emissions, ways to prevent and remediate dampness, and elements of a public health response to the issues. A comprehensive literature review finds sufficient evidence of an association between damp indoor environments and some upper respiratory tract symptoms, coughing, wheezing, and asthma symptoms in sensitized persons. This important book will be of interest to a wide-ranging audience of science, health, engineering, and building professionals, government officials, and members of the public.

Book Description
This thorough volume explores the possibility of detecting and identifying toxigenic fungi, able to produce secondary metabolites known as mycotoxins, which cause severe health problems in humans and animals after exposure to contaminated food and feed, having a broad range of toxic effects, including carcinogenicity, neurotoxicity, and reproductive and developmental toxicity. Beginning with a section on fungal genera and species of major significance along with their associated mycotoxins, the book continues with sections on Polymerase Chain Reaction (PCR)-based methods for the detection and identification of mycotoxigenic fungi, PCR-based methods for multiplex detection of mycotoxigenic fungi, as well as sections on combined approaches and new methodologies. Written for the highly successful Methods in Molecular Biology series, chapters include introductions to their respective topics, lists of the necessary materials and reagents, step-by-step, readily reproducible laboratory protocols, and tips on troubleshooting and avoiding known pitfalls. Authoritative and practical, Mycotoxigenic Fungi: Methods and Protocols will aid researchers working in this vital field to provide insight into possible actions to reduce mycotoxin contamination of crop plants and the food/feed byproducts.

Book Description
Mycotoxins, toxic compounds produced by fungi, pose a significant contamination risk in both animal feed and foods for human consumption. With its distinguished editors and international team of contributors, Mycotoxins in food summarises the wealth of recent research on how to assess the risks from mycotoxins, detect particular mycotoxins and control them at differing stages in the supply chain. Part one addresses risk assessment techniques, sampling methods, modelling and detection techniques used to measure the risk of mycotoxin contamination and the current regulations governing mycotoxin limits in food. Part two looks at how the risk of contamination may be controlled, with chapters on the use of HACCP systems and mycotoxin control at different stages in the supply chain. Two case studies demonstrate how these controls work for particular products. The final section details particular mycotoxins, from ochratoxin A and patulin to zearalenone and fumonisins. Mycotoxins in food is a standard reference for all those concerned with ensuring the safety of food. Discusses the wealth of recent research in this important area Covers risk assessment, detection of particular mycotoxins and how to control them throughout the supply chain Describes how the risk of contamination can be controlled, including the use of HACCP systems

Book Description
Microbes, especially molds and bacteria, growing in water-damaged buildings make people sick. The book follows Mold Warriors (published in 2005) as the definitive source of information on "mold" illness, its basis in inflammation, its physiology and its links to politics, lawsuits and science. It has true stories, regarding this increasingly common problem in the US and around the world. if you already know that you could be sickened by mold-damaged buildings, this book will guide you through diagnosis and treatment, through remediation and return to health.
