Book Description
The consumption of phytosterols (plant sterols and/or stanols) can reduce cardiovascular risk by reducing hypercholesterolemia. In addition to reducing intestinal cholesterol absorption, phytoserols (PS), which are structurally similar to cholesterol, have other potential beneficial effects in humans. There are a wide range of plants that have phytosterols in their composition. In this book, the food sources of phytosterols are explored. The authors evaluate whether a decrease in carotenoids associated with the consumption of a therapeutic dose of PS alters oxidative stress parameters. Furthermore, the characterisation of oils by phytosterols analysis was studied and is examined in this book. An overview of phytosterols in olive oil is given as well, particularly, the use of HPLC and GC coupled to various detection systems to isolate sterols from olive oil in order to focus on the occurrence of phytosterols and their role in human health.

Book Description
Part of the IFT Press series, this book reviews the myriadpublished information on bioactive components derived from marinefoods, enabling researchers and product developers to selectappropriate functional ingredients for new products. Chapters cover foods and food ingredients from both animal andplant marine sources, focusing on those which demonstratebiological properties and whose constituent compounds have beenisolated and identified as potentially active. This book furtheraddresses the biological activities of PUFAs (Polyunsaturated fattyacids), oils, phospholipids, proteins and peptides, fibres, carbohydrates, chitosans, vitamins and minerals, fucoxantin, polyphenols, phytosterols, taurine, amongst others. Thesecomponents, found in a variety of marine-derived foods, have beendemonstrated to have preventative properties with regard tohypertension, oxidative stress, inflammation, cardiovasculardiseases, cancer and other human diseases. Extraction methods and analysis techniques are also addressed.Intended for food scientists, food technologists and food engineersin academia, industry and government, this book reviews thesubstantial quantity of current research in this fast-moving andcommercially valuable sector of food and nutrition science.

Book Description
Knowledge is of two kinds. We know a subject ourselves, or we know where we can find information on it Samuel Johnson, 18 April, 1775* Sterols are among the most studied groups of natural products with interest commencing in the 19th century and running to the present. Investigations have embraced the refinement of separation procedures, the development of new analytical techniques and instrumentation for structure elucidation, the unravelling of biosynthetic mechanisms, the determination of the physiological functions of sterols, and the role they play in health and disease. In the past 20-30 years interest in the medical implications of sterol biochemistry, studies on the sterols of plants, algae and fungi, and the identification of the many unusual sterols from marine organisms have proceeded in parallel and somewhat independently. Although the motiva tion and goals for the various lines of investigation have differed widely the researchers working in each of these areas have contributed a wealth of knowledge to the literature relating to the analysis of sterols and many diverse new sterols have been discovered. We conceived this book as a modest attempt to bring together some of this literature in the hope that it may be helpful to newcomers to sterol research. We had originally intended to produce a 'handbook' outlining in detail the protocols to be followed for sterol extraction, chromatography, NMR analysis, etc. in order to identify the components of a sterol mixture.

Book Description
Sterols and other isoprenoids are of great interest for their molecular structure and function in cell architecture and evolution, as well as for their importance in medicine and agriculture. Molecules’ 2019 Festschrift Special Issue in honor of the 65th birthday of Prof. W. David Nes, an internationally recognized chemical biologist and recipient of the George Schroepher medal for sterol research, focuses on recent developments in the chemistry, biosynthesis, and function of these polycyclic natural products. This volume of Molecules contains 16 leading-edge review articles and original research contributions from an international cast of scientists. This volume is grouped into three sections: (i) isoprenoid metabolome and diversity, (ii) clinical evaluation of sterol and triterpene structures and biosynthesis, and (iii) methods and synthesis of steroids and other compounds. The volume will be a valuable reference tool for those who study medicinal chemistry, protein chemistry, and biochemistry of isoprenoid lipids.

Book Description
This book will assist you in planning your daily meals to maximize your consumption of phytosterols. Phytosterols are natural plant-based substances that are in many foods. Adding foods containing phytosterols to your daily diet, in addition to the plan prescribed by your doctor, can help you to reduce LDL ("bad") cholesterol by blocking the LDL cholesterol before it can be absorbed into your bloodstream. LDL cholesterol contributes to heart disease and blood vessel disorders. Another benefit of phytosterols is that they help protect levels of HDL ("good") cholesterol, even increasing it over time. Continuing to add foods containing phytosterols to your diet every day will build up protection while reducing harmful cholesterol levels.

Book Description
This book provides basic knowledge of the biology, chemistry, and function of oxysterols and its derivatives as well as of phytosterols in numerous human diseases. The book is divided into six sections and begins with an introduction to the biological and chemical properties of oxysterols and its derivatives as well as phytosterols, their synthesis, and the methods currently used for their detection in various biospecimens. The following section discusses in detail the various effects of oxysterols on numerous human diseases, including infectious diseases, inflammatory and autoimmune diseases, atherosclerosis, and cancer, as well as neurological and neuropsychiatric disorders. Importantly, the potential of oxysterols as biomarkers for some of these diseases is also highlighted. The book concludes with an outlook on the pharmacological and nutritional effects of oxysterols and phytosterols and their potential use by the food, and pharmaceutical industries. Aiming to provide an in-depth overview of the biological and the chemical properties of oxysterols and phytosterols and their implications for human health, this book will be of interest to basic and clinical scientists, as well as to anyone working in the food or pharmaceutical industry who is exploring the potential of oxysterols and phytosterols.

Book Description
This book comprehensively reviews several aspects of cholesterol oxidation products: cholesterol oxidation mechanisms, analytical determination, origin and content of these compounds in foods and biological samples, and their biological effects, with an emphasis on recent advances in these fields. Information on different aspects of phytosterol oxidation is reviewed. Little research has been conducted on the analysis of mixed sterol oxidation products. Mixed diets containing both cholesterol and phytosterols can contain a complex array of oxidation products generated from these sterols. Research into the problem of analyzing these complex mixtures of compounds is highlighted.
